The sealing rings enable the instant pot to build up steam pressure for cooking food.

You can't cook without the pressure ring. However, these silicon rings can retain odors from foods you cook.

You may not want to cook a dessert dish with a pressure ring previously used for food that used garlic since the flavors can carry over.
