Under HACCP regulations, every cheese type must be cut with its own knife. For this purpose, Boska Holland offers three types of knives with colored handles. The red handle is for red mold, the white handle is for white mold and the blue handle is for blue-veined cheeses. This narrow blade knife for fresh, soft and semi-hard cheese has an elevated handle which keeps your hand free from the cutting board while cutting. The very narrow blade prevents the blade from sticking. The cutting surface measures 5.51 inches and it is dishwasher safe.
