After the dough has been fermented, gently transfer it to the tray in the oven. The proofing basket wicks moisture away from the surface of the dough and makes that round and crispy crust. Also, it is less sticky, so you can easily and nicely remove the dough with less flour! After removing the bread, remember to keep the basket in a warm and dry place. Once dry, knock the banneton to release any loose flour and then use a stiff cleaning brush to remove excess flour.
